Mac 'n' Cheese–and Hunks!

Hey there, gang! Angel Payne here, excited to help celebrate BETTER THAN SEX NOVEMBER. And I have to tell you right now that this recipe I’m sharing is damn near orgasmic. Do NOT let the title fool you. It has the word “Vegan” in it but the moment I first tasted this, I didn’t give a crap if if it had mouse guts in it. This sh** is GOOD.

I also going to post a full disclaimer: I did not conceive this recipe. Gang, if given the chance, I’ll literally burn water. Thank God I married a man who loves to cook, and does it like a dream. He keeps me fed (especially near deadline time…but let’s not go there because I just got through one and am still bearing the emotional scars…LOL) in exchange for me tending our garden and conceiving wildly cool holiday decorations for the house. (No lie, I even put up lights for Valentine’s Day and Easter–and don’t get me started on Halloween and Christmas.)

So you guys, I’m sharing my favorite “borrowed” recipe for this thing. You will notice that it doesn’t state how many servings this feeds–because I can literally mow down a whole casserole dish of this stuff in one sitting. You’ll love it!! BEST VEGAN MAC ‘N’ CHEESE IN THE WORLD

What you need:
1 1/2 pounds pasta, preferably macaroni

Vegan “Cheese Sauce”:
1 1/2 cups unsweetened nondairy milk
1 1/2 cups nutritional yeast
1 cup canola or vegetable oil
1 cup water
1/3 cup tamari or soy sauce
1/4 (12 ounce) block firm (not silken) tofu
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon vegesal or in lack of fancy product, just use salt
1 dollop mustard, optional
What you do:
1. Preheat oven to 350 degrees Fahrenheit. Boil water in a big pot and cook pasta according to package directions.
2. Add all of the “cheese” sauce ingredients in a blender and process until smooth. Once pasta is cooked, drain and put it in the baking pan (about the size of a brownie pan). Pour the “cheese” sauce over the pasta.
3. Bake until the top of the pasta looks slightly browned and crispy, about 15 minutes.
This is very simple and tastes amazing! If you are cooking for yourself, it will last about 5 days if you eat it for all three meals of the day.
Preparation Time:
about 8 minutes; Cooking Time: 15 minutes

    Awesome! I’m always looking for new and interesting ways to serve tofu. Thank you for sharing. The mouse guts comment made me snort.

    I remember when my husband enjoyed cooking. ~sigh~ I don’t know what happened there but I actually ended up with limp, *burned* bacon yesterday out of cast iron. Go figure…
