V is for…Vegetables! (and contest)

And before everyone says ew….let me assure you that I’m not talking about veggies in their normal setting.  Growing up in Iowa, I was raised on home grown veggies fresh from my grandma’s garden…heck I’m even planning the layout of this year’s garden for my kiddos.   But that’s not what I’m talking about today.  Nope what I’m talking about trying something new – getting a new perspective on something healthy.  In this case….a type of pizza that would’ve never made it into my house before my divorce: Fire Roasted Vegetable Pizza.

I tried this shortly after my divorce was final.  It was a rare night when my kids were all gone at friends and it was just me wandering around my empty house.  I didn’t feel like cooking anything so I grabbed a frozen pizza at the grocery store – but I didn’t want the norm. (Which in my teenage infested home is either pepperoni and black olive, combination or cheese pizza)  That’s when this box caught my eye.

Okay green and yellow peppers, garlic, mozzarella and other smoked cheeses?  Yep,that’s definitely a pizza.  But the green stuff….Had someone honestly put spinach on a pizza? Being in an adventuresome mood, I decided to try it. (Worse case scenario I’d end up eating a bowl of cold cereal if it was truly disgusting.)  Much to my surprise I loved it.  (Other than the burping up of peppers later.)   It was savory, but slightly sweet and best of all – it wasn’t greasy like traditional pizza.  It was so good I nearly ate the whole pizza in one sitting.

Since then, I can’t seem to get enough of this pizza.  My kids of course won’t touch it (my oldest still insists that it’s not pizza), but I’ve found my great niece who is 2 loves it as much as I do.  So once a week we have our veggie pizza.  So the moral of the story? Try out something new.  You might just be surprised at what tastes better than you imagined.  🙂

    Hi Dakota, sometimes it’s fun to take a chance and try a new food. I didn’t like veggies much as a kid cause we ate them from cans. Now I love fresh vegetables, especially spinach sauteed with some oil and garlic–it’s delicious!

    That pizza looks great. I wished I had one right now. So my most recent food adventure was asparagus. I never thought I would eat asparagus much less love it. But only if it is grilled and grilled right. Not overdone and not any other way.
