Summer’s hot and the kitchen’s hotter, so the Nice Girls are looking for great recipes to cool us (and YOU!) down this summer. Our contest runs from AUGUST 4TH – 17TH. We’re posting daily featured recipes on the blog from each of our Nice Girls, but we want you to participate.

Post your own cool-down recipes in the comment section of the featured post. The recipe can be for a drink, an appetizer, an entrée, or a yummy dessert. Each recipe you post enters you to win our GRAND PRIZE OF A $50 AMAZON GIFT CARD at the end of our contest. More recipes = more entries.

Now for today’s Featured Recipe: Peppermint Syrup from Nice Girl A. Catherine Noon

mintIngredients

  • 6 c loosely packed fresh peppermint leaves
  • honey or sugar (see directions, below, for quantity)

Directions

  • Cover the peppermint leaves with water (just put enough water to cover them) using a non-metal saucepan.
  • Bring to a boil and simmer for 30 minutes, being careful not to let them boil heavily.
  • Strain for 1 hour through layers of cheesecloth. Discard peppermint leaves (they’re great for your compost).
  • Add 1 cup of sugar or honey for each cup of liquid.
  • Return to saucepan and simmer for 15 more minutes, until sweetener dissolves.

Uses

  • Use in tea. Add a tablespoon of syrup to a mug, pour boiling water.
  • Use over vanilla or chocolate ice cream as a dessert.
  • Use as a topping for chocolate cake.

  2. BBQ CHICKEN SALAD
    Prep Time
    10 minutes
    Cook Time
    5 minutes
    Total Time
    15 minutes
    Yield
    2 servings

    INGREDIENTS

    1 tablespoon olive oil
    2 boneless, skinless thin-sliced chicken breasts
    Kosher salt and freshly ground black pepper, to taste
    6 cups chopped romaine lettuce
    1 Roma tomato, diced
    3/4 cup canned corn kernels, drained
    3/4 cup canned black beans, drained and rinsed
    1/4 cup diced red onion
    1/4 cup shredded Monterey Jack cheese
    1/2 cup shredded cheddar cheese
    1/4 cup Ranch dressing
    1/4 cup BBQ sauce
    1/4 cup tortilla chips strips

    INSTRUCTIONS

    Heat olive oil in a medium skillet over medium high heat.

    Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces.

    To assemble the salad, place romaine lettuce in a large bowl; top with chicken, tomato, corn, beans, onion and cheeses. Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.
    Serve immediately, topped with tortilla strips.

    I usually warm up the corn, & sometimes leave the onion & beans out lol. It depends on my mood. 😉

    I had gotten this salad at a restaurant before & I was in heaven,… & then I went back to the place another time & they didn’t have it anymore!! I was just so disappointed that day lol. So I found a recipe online & made it myself. =)

    So here is my last one to share with you all for now! I hope you’ll give it a try. =)

    Here’s a quickie dessert to top off today’s delish salad and fab drink!

    Kahlua Dip
    8 oz of cream cheese (you can use low fat if you want)
    8 oz of whipped cream (in container)
    1 shot of Kahlua (or more!)
    Semi-sweet chocolate chips

    Take cream cheese out of the fridge and allow it to soften, then mix with whipped cream, Kahlua, and chocolate chips.
    Enjoy the dip with graham crackers!

    Marinated Tomato & Cucumber Salad
    2 cups sliced tomatoes
    1 sliced cucumber
    1/2 cup sliced red onion
    1/4 cup olive oil
    2 Tbsp balsamic vinegar
    1 tsp dried oregano

    Toss all the ingredients together in a bowl. Marinate & chill for at least an hour before serving.
