Summer’s hot and the kitchen’s hotter, so the Nice Girls are looking for great recipes to cool us (and YOU!) down this summer. Our contest runs from AUGUST 4TH – 17TH. We’re posting daily featured recipes on the blog from each of our Nice Girls, but we want you to participate.

Post your own cool-down recipes in the comment section of the featured post. The recipe can be for a drink, an appetizer, an entrée, or a yummy dessert. Each recipe you post enters you to win our GRAND PRIZE OF A $50 AMAZON GIFT CARD at the end of our contest. More recipes = more entries.

Now for today’s Featured Recipe: Watermelon Arugula Feta Salad from Nice Girl Jianne Carlo

I love watermelon and this salad is cool, refreshing, and delicious. It’s adapted from a recipe I saw on The Fresh Market site (I reduced the oil and added the arugula),

Ingredients:

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp. Dijon mustard
  • 1 tbsp. honey
  • 1 clove garlic minced
  • 1 medium seedless watermelon cubed
  • 1/2 red onion thinly sliced
  • 3/4 cup fresh mint chopped finely
  • 8 oz crumbled Feta cheese
  • bunch arugula coarsely chopped

Preparation

In a small mixing bowl, whisk together vinegar, olive oil, mustard, honey, and garlic. Season wit salg and pepper and set aside Refrigerate until ready to serve.

Line a serving platter with the arugula. Spread 2/3 of watermelon on top of the greensr. Top with onion, mint, and cheese and garlic. Season with salt and pepper. Pour dressing over salad and garnish with remaining watermelon cubes.

Excellent with grilled shrimp or chicken.

  1. Vegetable Pizza

    Ingredients
    2 (8 ounce) packages refrigerated crescent rolls
    2 (8 ounce) packages cream cheese, softened
    1 cup mayonnaise
    1 (1 ounce) package dry Ranch-style dressing mix
    1 cup fresh broccoli, chopped
    1 cup chopped tomatoes
    1 cup chopped green bell pepper
    1 cup chopped cauliflower
    1 cup shredded carrots
    1 cup shredded Cheddar cheese

    Directions
    Preheat oven to 375 degrees F (190 degrees C).
    Roll out the crescent roll dough onto a 9×13 inch baking sheet, and pinch together edges to form the pizza crust.
    Bake crust for 12 minutes in the preheated oven. Once finished cooking, remove crust from oven and let cool 15 minutes without removing it from the baking sheet.
    In a small mixing bowl, combine cream cheese, mayonnaise, and dry Ranch dressing. Spread the mixture over the cooled crust. Arrange broccoli, tomato, green bell pepper, cauliflower, shredded carrots, and Cheddar cheese over the cream cheese layer. Chill for one hour, slice and serve.
