Summer’s hot and the kitchen’s hotter, so the Nice Girls are looking for great recipes to cool us (and YOU!) down this summer. Our contest runs from AUGUST 4TH – 17TH. We’re posting daily featured recipes on the blog from each of our Nice Girls, but we want you to participate.

How?

Post your own cool-down recipes in the comment section of the featured post. The recipe can be for a drink, an appetizer, an entrée, or a yummy dessert. Each recipe you post enters you to win our GRAND PRIZE OF A $50 AMAZON GIFT CARD at the end of our contest. More recipes = more entries.

At the end of our contest, FOUR lucky readers will be chosen by the Nice Girls for second place prizes, one in each food category.  Now for today’s Featured Recipe: Frozen Lemon Dessert  from Nice Girl Nona Raines

Frozen Lemon DessertHi friends! If you’re like me, you hate to cook in the heat. So today I’m offering a super simple no-cook dessert recipe. And guess what? It only contains two ingredients!

Ingredients

  • 8 oz. (1 cup) heavy cream
  • 11 – 12 oz (1 jar) lemon curd (try to get the kind without artificial coloring/additives)

 

Directions

  1. Pour chilled cream into a bowl and whip it until the cream forms soft peaks.
  2. Fold in the lemon curd and combine gently until thoroughly mixed.
  3. Place paper cupcake liners into a cupcake pan and scoop in portions of the lemon cream. Place in the freezer until frozen. Or, if you’re impatient like me, just layer the cream with fresh fruit in a parfait glass and forget the freezer all together!

  4. Dark Chocolate Mousse

    Ingredients
    5 1/4 ounces bittersweet chocolate, coarsely chopped
    14 ounces cold heavy cream
    3 large egg whites
    1 -ounce sugar
    Sweetened whipped cream, for garnish, optional
    Shaved bittersweet chocolate, for garnish, optional

    Directions
    Place chocolate in a large bowl set over a bain marie or in a double boiler at a low simmer. Stir chocolate until melted. Turn off the heat and let stand.

    Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.

    Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set. Serve in goblets topped with more whipped cream and shaved chocolate, if desired.

      Ah, Brandi, I can tell you love to cook as much as I do. My DH(Dutch Husband) is going to love this. I’m allergic to chocolate, so unfortunately, I won’t be trying it. 🙂

      1. Allergic to chocolate? Oh no! =( That so stinks! I think i’d be very sad if I couldn’t have chocolate. =(
